Healthy Hearty Gluten-Free, Dairy-Free and Nut-Free Snack Bars 

As the weather changes so do our snack cravings. I know everyone in my house is wanting for their snacks to be a little more robust and rich. In my quest to keep my wee ones healthy, happy and so well nourished I am forever morphing and melding my snack creations to meet their needs and keep them interested!

I am happy to say that these nut-free, gluten-free and dairy-free snack bars have been a huge hit! With all of the allergies, intolerances and taste preferences of friends and family I wanted to come up with something that everyone could enjoy as well as cutting down on some work for me:o)! Having one snack that everyone can happily, healthily and deliciously indulge in is perfect.

These chewy, sweet and filling little gems are packed with energy boosting chia seeds, tummy filling fibre from the oats, healthy fats and protein from the sunflower seed butter. Awesome right? Adding to their awesome-ness is that fact that they are really easy to make!

Nut-Free, Gluten-Free, Dairy-Free Snack Bars

1 1/2 cup gluten-free crispy rice

3⁄4 cup gluten-free oats

2 Tbsp ground flax seeds

2 Tbsp either chia seeds or ground seeds (ground sunflower, pumpkin and sesame seeds)

1/4 cup chopped dried cherries

1/4 cup chopped dried apricots

1/2 cup sunflower seed butter

1/3 cup brown rice syrup (generous)

2 tsp vanilla (or 1/2 tsp vanilla bean powder… you know how I feel about how perfectly wonderful vanilla bean powder is!)

-Line a 9×9 pan with parchment paper.
-Mix together all of the dry ingredients.
-In a small sauce pan, on low heat mix together the brown rice syrup and sunflower seed butter until it is just mixed and creamy.
-Add the vanilla and mix well.
-Add the seed butter mixture into the dry ingredients.
-Mix really well, you may need to get your hands in there!
-Put into lined 9×9 pan and press firmly. I use my potato masher for this. Press really well then put into the freezer for 1/2 hour to and hour.
-Bring them out and cut as you please, store in the refrigerator or freezer.
