Plant Based Protein Party!!

Meatless Monday Taco Party

1 cup cooked lentils (lentils of your choice)

1/2 cup ground walnuts

1 cup chopped mushrooms

1 cup chopped kale (or spinach)

1/2 cup grated sweet potato

1 onion chopped

1-2 cloves of garlic pressed

1-2 tbsp olive oil

1/4 cup vegetable broth

1 packet of your fave taco seasoning

Your favourite taco shells, hard or soft or both! Or you could use lettuce wraps… so many delicious options!!

~ sauté the chopped onion in 1-2 tbsp extra virgin olive oil over medium heat until translucent. Add the pressed garlic and the chopped mushrooms sauté for about 5 minutes, add the chopped kale, grated sweet potato and 1/2 of the veggie broth, continue to sauté until the kale is soft and tender.

~ add cooked lentils and ground walnuts, continue to sauté 5-8 minutes.

~ add the taco seasoning pouch and mix well, reduce heat and let simmer. Add more veggie broth if needed.

Sauté until all is well mixed, consistency is as you would like it and your kitchen smells ridiculously good!

Whilst you sauté, you can prepare the party fave guacamole.

Guacamole recipe

2 ripe avocados

1 garlic clove pressed

2 Tbsp red onion chopped

Salt

Juice of a lime

~ smash all ingredients together… period ?

Build your taco as you would please! Heat the shells according to package instructions and fill with this delicious plant based, protein packed nutty lentil taco filling, top with guacamole, salsa, chopped lettuce, jalapeños…

Perfect Chewy Granola Bar!

Recipe for this perfectly protein packed granola bar:

1 cup rolled oats (gluten-free in you need)

1 1/4 cup crispy brown rice

1/4 cup chopped toasted cashews

1/4 cup chopped baruka nuts

1/4 cup chopped dried dates

1/4 cup chopped dried cherries

2 Tbsp chia seeds

1/2 cup natural peanut butter

1/2 cup brown rice syrup

2 tsp pure vanilla extract

A sprinkle of cinnamon

~ In a large bowl, mix all of the dry ingredients together.

~ In a sauce pan over low heat, combine the brown rice syrup and the peanut butter until we’ll blended but not hot. It only takes a couple minutes. Remove from heat and add the vanilla extract, mix well.

~ Pour the peanut butter mixture into the dry mix and mix to blend, it can get a little sticky and you may want to get your hands in there to really mix it up!

~ Line an 8×8 or 9×9 baking dish with parchment paper.

~ Pour the mixture into the baking pan and press down. I like to cover the mixture with another piece of parchment paper and use a potato masher to REALLY press the mixture into place.

~ Place into fridge for 15 minutes, remove from fridge and cut into bars or bites. Any shape you please! Store in the refrigerator or in the freezer.

Theses babies travel really well and they are hearty enough to take on hikes. Great for school lunches, breakfast on the go or a snack at work. So satisfying, so delicious and packed with plant based goodness!

You can substitute any different kind of nuts and seeds and dried fruit, so you can really personalize them to your preferences. Get creative and find out what delicious combinations you can come up with!

Hello my sweet, simple and delicious friends! 

Oh this journey that is life! I am riding this beautiful (although sometimes scary and frustrating) wave of life and my blog, my beloved blog has been suffering!! 

I have been trying to keep it alive with recipes still coming to you! Hopefully inspiring recipes that will get you in your kitchens and cooking for yourselves,  the ones you love, guests… whom ever you please! But I want it to be more than just alive, I want it to be thriving! 

First, before I get into my story, let me say that the link above is to the segment from Good Morning Ct at 9 Meatless Monday with who else but… ME!! Just in case you would like to skip my story! The recipe will be at the end of this post but it is also attached to the link above. I will NOT judge you for skipping to the recipe! 

I started my blog and wellness business about 3 years ago, my son was 2 and my daughter was 5. I was married and living in Bermuda. Not too shabby right?!? I was living a very different lifestyle than the one I am living now, that’s for sure! Not better… just different.

Fast forward 3 years and I am in the process of a divorce and living in the states with my amazing, sweet, clever, kind and extremely loving (sometimes exasperating, because this IS real life) 5 and 8 year old children. There are different demands on me now that there were not before needless to say! 

It has been an extremely humbling couple years… and a HUGE learning curve. Especially in making time for myself to take care of myself. I have always been an advocate of people making sure they take care of themselves! I preach it to my clients! Then suddenly I found myself… not taking as much care with myself as I needed! I was getting sick, not having my normal (very high) amount of energy, my patience was not what it once was. I could not be teaching people balance if I was not finding it for myself! So I set to work! Thank goodness, because having been quite balanced and then finding myself so unbalanced was horrible!? It affected every aspect of my life. So with my changing life, I changed too… gratefully for the better.

The foods that you eat, no matter the budget that you are on, are extremely important! Moving your body, no matter how busy you are is extremely important! Taking time to meditate… I have learned… is nothing short of a game changer! 

We thrive from the inside out. The last couple years have made me so much more aware of how important it is and how challenging it can be. This is what I work on with my clients. Finding balance. I find the clients that are drawn to me now are different than the clients that were drawn to me 3 years ago. As I grow and learn and change so is my attracting energy!  I am so grateful and honored to be working with each and every one of them! The more I am working with people the more I learn about myself. Finding balance with food, movement and spirituality whilst working, raising a family, making meals, doing laundry, taking care of pets… the list seems endless… can be exhausting. Finding that balance is key to enjoying this beautiful (sometimes scary and frustrating) journey! And that is what we are here for my friends! To ENJOY the journey.

Strength is in how calmly and peacefully you deal with life.

I have also learned gratitude on a whole new level. My children have taught me gratitude to a whole new degree and my situation, although at the moment not ideal, has taught me to appreciate so much more than I have appreciated in the past! Through adverse situations I have come to truly believe in miracles!

So all of this having been said, I am going to be here more and my blog stories are changing with me… this is real life! I am in the thick of the most difficult thing I have gone through to date and so grateful for my friends, family and my followers on my sweetsimpledelicious.com site! I am so honored that you read my work and try my recipes! Thank you!??

Today’s Meatless Monday Dish… 


Because food matters! Especially when life gets crazy!


This is a great dish to have with friends!


So fun, a little spicy and a lot delicious!

Spicy Tofu Lettuce Wraps

8-12 Ouncesof very firm tofu, cubed

1-2 Cloves of garlic, pressed

One carrot shredded

2 Tsp olive oil

3 Tbsp Tamari sauce

3 Tbsp Hoisin sauce

1 Tsp chili sauce

1 Tsp freshly grated ginger

I can water chestnuts chopped

Scallions

Optional: Chopped peanuts

One head of butter lettuce or iceberg lettuce

-Rinse lettuce very well and set to the side.
-In a skillet over medium heat, add oil and garlic and sauté for one minute. Add freshly grated ginger and sauté for a minute or two more.
-Add chopped very firm tofu and Sauté for 4-5 minutes.
-Add Tamari, Hoisin and chili sauces. Mix well.
-Add shredded carrots and water chestnuts, sauté for an additional 3 minutes
-Scoop into lettuce shell and top with chopped scallions and chopped peanuts.
Enjoy!!

Sooooo… when it is summer time and you are a single mum and your kids come to your super cool Meatless Monday gig with you and you have 1000 other life “things” to do… this is your sweet, simple and delicious post…

I say the above not as a sob story! I love my sweet, simple and delicious life! I say it only because I sometimes do not post because I feel like I am not having enough time to say all I would like to say and share as much info as I would like to share! So this time I am posting anyway!

Here is the recipe my friends! I hope you like it!

Hahaha… I am literally laughing out loud that this is my post! 

I live by the words:

“Always do your best!”

Some days our “best” looks different than others days!  Today I am giving my best to my 2 sweet littles and still getting some amazing tasting healthy foods out there!

Eat the Rainbow!
1 small purple cabbage chopped
3 cups kale chopped
1/2 red pepper sliced thinly
1/2 orange pepper sliced thinly
1/2 yellow pepper sliced thinly
One carrot julienned
1/2 Cup toasted pumpkin seeds
1 Cup drained and well rinsed black beans

The Dressing:

1 Tbsp sesame oil
1 Tbsp extra virgin olive oil
2 tsp honey
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 Tbsp toasted sesame seeds
~Mix all of the ingredients for salad together in a large salad bowl.
~In a jar, mix all of the ingredients for dressing and shake very well.
~Dress the salad and toss.
~Enjoy!

Vegan Mac and Cheese

With the cooler weather soon to be upon us (I am not rushing it at all!!! I promise!!) I have been thinking about comfort foods and Mac and Cheese ALWAYS pops into my head when I think “comfort foods”! Creamy, delicious, hearty, filling… did I mention delicious… oh! And this version is packed with nutrition!! Woot, woot!

This vegan “cheesy” sauce is amazing used in a gorgeous Mac and Cheese creation and it can also be used on its own as a creamy “cheesy” dip or over vegetables to get all of that extra nutrition.

There are so many nutrients packed into this dish, including the fact that nutritional yeast is a source of a complete plant based protein. Always a big question from my clients about plant based eating… “where is the protein?” Here is it friends!

Imagine! All of these fab ingredients packed into one yummy scrummy sauce?!?

Note: in the below video I had used Worcestershire sauce which I have taken out of the written recipe. I had the gross oversite that this sauce contains anchovies so is neither vegan nor vegetarian. Please note that if you watch the video. The recipe below that has been amended.

Vegan Mac and Cheese

1 cup cashews pre-soaked

3 Tbsp nutritional yeast

2 Tbsp avocado oil

1 tsp apple cider vinegar

1/2 tsp onion powder

1/2 tsp dry mustard powder

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp cayenne pepper

1-2 cloves of garlic

1/2 sweet potato pre-boiled

1/2 white potato pre-boiled

2 carrots pre-boiled

1/4 cup water

Pasta of your choice

~Cook pasta of your choice according to directions on the package.

~Place all of the ingredients for the sauce in a food processor and blend very very well until very very smooth. If the consistency is too thick add a little water and keep blending.

~Pour vegan “cheesy” goodness over hot pasta and mix well.

~ Enjoy!

*to prepare cashews, simply place into a dish and cover with water, let soak over night. For a quick soak, cover the cashews with boiled water for an hour.

*pre-cook potatoes and carrots :boil for 15 minutes or until tender.

*steamed broccoli is a great addition to this dish!

I Am Back! … with granola bars!

Good morning friends!

Well! This last year has been intense to say the least! The last 3 years have been intense! Because of this crazy ride feeling a little overwhelming my Sweet, Simple, Delicious site has taken a back seat. Sadly!

I am going to do a series of quick posts with the link to recipes from the WTNH channel 8 site. Just so I can get these recipes to you and get back in the game.

I am starting with these easy, no bake, super yum granola bars that are perfect to grab and go with on these hot summer days. All of these awesome summer adventures can leave us hungry and these granola bars are packed with the protein and fiber you need to keep you going!

I am excited to share these with you and going forward I am excited to share some of the daily lifestyle and spiritual practices that have gotten me through the last 3 years with 3 major moves, a divorce, having to build my clientele back from scratch (and at my age!!?) all whilst raising, loving, supporting and championing my 2 wee ones! Whew, parenting is no joke! The best job ever but not for the faint of heart! ❤️

Energy boosting granola bars

1 1/4 cup crispy rice

Sprinkle of cinnamon

~Place all dry ingredients into a large bowl and mix well.

~In a small sauce pan Over low heat, mix together the peanut butter and brown rice syrup, until blended. Remove from heat.

~Mix in vanilla, blend well.

~Pour peanut butter mixture into dry ingredients and mix really well! You may have to get your hands in there!

~Pour into 9×9 parchment paper lined pan and press down mixture firmly.
(Potato masher works great here!)

~Refrigerate for at least an hour before cutting.

~Enjoy!

Apple Pie Over Night Oats!

I love this season! The transition from beaches, BBQ’s and the light and breezy ways of summer (that I will dearly miss but in the spirit of embracing change, will let go of) to county fairs, chunky sweaters, beautiful boots, changing colours and changing cravings…

All of it! I just love all of it! Having lived away from the change of seasons for so many years, I am still as excited as a child for the changing colours of the landscape and a brisk breeze brings a smile to my face, every time!

This season can also be a time of change for us internally as well as the land scape around us changing. A time to reign in our lifestyle choices after a summer of indulgences. A time to set goals, re-evaluate situations, reflect on how we would like to be living and what changes we can make to help that happen.

A time of change and growth.

As a Holistic Health Coach, this is exactly what I help people with. Finding balance. Through nutrition, movement and meditation.

Apple Pie Over Night Oats

1 Cup gluten free rolled oats

2 Cups almond or coconut milk (or combo of both!)

1/4 Cup chia seeds

1 Tbsp hulled hemp hearts

1/2 tsp cinnamon

1/8 tsp nutmeg

1 tsp vanilla

1 1/2 Tbsp pure maple syrup

1/2 – 1 Apple chopped

4 Medjool dates chopped

1/4 Cup chopped walnuts

  • Place all ingredients in a jar, cover and shake, shake, shake!
  • Place in the refrigerator over night.
  • Next day, serve cold or heat. It is great either way!
  • If heating: warm in a sauce pan over medium heat, add extra almond or coconut milk to make creamier and top with an extra sprinkle of cinnamon if you’d like!
