After being away for the weekend and coming back to a pantry that needs filling, I had to get a little more creative than usual! Which is actually always super fun! Especially when it works out in my favour!
These little yummy muffins are definitely a treat and on the dessert side as there is a hearty dose of maple syrup sweetening them, so make sure you are still getting your greens! However, they are also filled with some pretty amazing ingredients that keep things in balance!
Oats, flax seed, plant based protein, coconut cream… We can live with those right????
I have been experimenting with adding plant based protein powder into my baked goods to really boost my 2 littles protein intake and I have found that in the right combo it can add a really delicious flavour and texture!
I used Juice Plus Complete French Vanilla. The link to info for Juice Plus is below. Incredible product!!
I LOVE this product and LOVE the flavour which honestly, I am REALLY picky about when it comes to protein powders.
Enough said! On to amazing recipe delivery!!!
1 cup ground oats
1 cup flour
1/4 cup vanilla plant based protein powder
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
3 tbsp ground flax seed mixed with 6 tbsp water
3/4 cup pure maple syrup
1/2 cup coconut cream
1/4 cup olive oil
1 tsp vanilla
1/2 cup chocolate chips (if you use vegan chips you now have full on vegan muffins!)
-Pre-heat the oven to 350 degrees.
-Line or lightly grease your mini-muffin tins, or full size if you prefer.
-Mix ground flax seed and water together, set aside.
-Mix all dry ingredients together, set aside.
-Whisk together maple syrup, coconut cream, olive oil and vanilla.
-Add the wet ingredients into the dry and mix until well blended.
-Add the ground flax mixture and mix until well blended.
-Add chocolate chips and do the same!
-Scoop into your prepared muffin tins and bake for approx. 15 minutes.
-Let cool for a few minutes before you remove from the tin.
Guess what?!?! They go really well with a nice cup of tea!!!😊
