I love this Walnut Pesto on practically everything but it is especially good in this light cucumber (and zucchini) summer salad! Not only is it super yummy but it is packed with super foods! Walnuts, kale, pumpkinseeds… My daughter loves this Pesto and she is a hard sell so I am totally taking her word for it!
And then there are the “noodles” or “zoodles” as we like to call them! Easy as can be! All you need is a cucumber, a zucchini and a spiralizer! You could also just cut the cucumber and zucchini however you would like, in chunks or rounds or even julienne style but the spiralizer seems to make it really fun.
Add in black beans for protein and extra veggies to help get those 10-13 servings of fruit and veggies a day in and you have a beautiful and delicious salad that could be a side or a main dish. I love that!
2 Tbsp chopped walnuts
1/4 cup pumpkin seeds
3 cups fresh basil ( I usually measure by handful… 3-5 is beautiful)
A handful of chopped fresh kale
2 cloves of garlic
1 tsp sea salt (add more to taste)
1/4-1/2 cup olive oil
-Place all of the ingredients into the blender. Start with 1/4 cup olive oil and add more to get desired consistency. Blend away!
1 Large cucumber
1 Cup black beans (well rinsed)
1/2 Red Pepper (chopped)
1/2 Orange pepper (chopped)
– Wash your veggies 😊
– Spiralize or chop into chunks the cucumber and zucchini.
– Add a generous amount of Walnut Pesto and toss together.
– Top with black beans and peppers.
