I was lucky enough to be asked to present on Channel 8 CT Style! It was so fun, everyone was so nice and I got to share 2 of my favourite summer-time kid friendly, nutritious, delicious and plant based protein snack recipes!???? Summer-time can be filled with so many BBQ’s and parties that it can be difficult to keep your eating clean. I always say that preparation is the key to success and by having some pre-made, home-made, nutrient dense snacks in the freezer for those busy beach days you can sail through the summer with out losing your mind, energy or healthy vibes!
??Above is the link to my segment! Please check it out! I would love to hear from you and if you can “like” it on their page that would be great!!
I altered my Awesome Almond Joy Bites recipe for this occasion. I have been obsessed with the Juice Plus Complete Protein Powder! It tastes amazing and adds a plant based protein punch to these little bites of joy! I also love that it hosts 15 fruits, veggies and whole grains! It is Vegan and Gluten-free and if you are at all interested in trying it, here is a link.
It comes in Vanilla and Chocolate and I use it in so many recipes these days to boost the nutritional content for my whole family!
1/2 cup raw almonds or cashews
1/4 cup almond butter
8-10 medjool dates
1 tsp vanilla (or 1/4-1/2 tsp ground vanilla bean powder, hands down my favorite!)
¼ cup plant based protein powder
2 tbsp chia seeds
1-2 tbsp maple syrup (I have used 1 and 2, both options are great, it just depends how
sweet you would like it)
1 1/2 tbsp cacao powder
1 tbsp room temperature coconut oil
shredded coconut for rolling
– Place all ingredients except for the shredded coconut and blend it… A lot! Scrape down
the sides and blend again as needed, it will take a few minutes but definitely worth the
blending time :o)
– Roll into one inch balls
– Roll through the shredded coconut and put in the freezer for at least 30 minutes
“They Will Never Now” Blueberry Blast Smoothie
2 cups of your favourite nut milk or coconut milk
2 cups of Blueberries
Juice of 1 very juicy orange
1 Frozen banana
A large handful of fresh spinach
1 Tbsp ground flax seed
Ice cubes if needed
-Place all of the ingredients in the blender and blend away!
-Makes 2-3 servings depending on the size
– Put the leftover smoothie into popsicle molds and pop in the freezer for a super healthy anytime
This smoothie also rocks as popsicles!! My two wee ones devoured them! In fact I did not get a photo because they were gone so quickly!☺️
I hope you get a chance to try these yummy recipes and that they keep your summer a little easier and healthier!
Please let me know what you think, I LOVE hearing from you!
Happy start to the summer my friends! ❤️ April
