Vegan Banana Blondie Squares!!

Well, here is a little slice (or square) of totally guilt-free yumminess!!

Bananas! Bananas! Bananas! I had so many bananas! I had to use them, and so I did! I also had a sweet tooth that I needed to appease, and so I did! Without any guilt I must add! Win, win right?!

I also hosted a wellness event recently and had these little loves among the healthy snack samples  for people to try. They were met with many requests for the recipe and my resounding YES! So, packed with fiber and tasted but with no refined sugars, adult and child approved… I give to you…


VEGAN BANANA BLONDIE SQUARES


1 cup ground oats

1/2 cup almond meal

1 tsp baking powder

2 tsp vanilla

1/2 tsp salt 

2 large, very ripe bananas

10-12 medjool dates (pre-soaked)

1/4 cup applesauce

1/4 cup vegan chocolate chips

-Pre-heat oven to 350 degrees.

-Line a 9×9 square baking dish with parchment paper.

– Pre-soak medjool dates by placing in a dish, cover with water and leave to soak overnight. You can also do a “quick soak”, place the dates in a dish, cover with boiling water and leave to soak for one hour.

-In a bowl combine all of the dry ingredients.

-In a blender or food processor, add bananas, pitted medjool dates, applesauce and vanilla. Blend until creamy and very well Blended.

-Mix the wet ingredients into the dry ingredients. Mix well.

-Stir in the vegan chocolate chips.

-Pour batter into your prepared dish and bake for 22-25 minutes.

-Let cool in the pan… or just wait a few minutes and dive in! That is what I did!! Amazing with a nice cup of Oolong tea!!😊
