This will be a truly sweet, simple, delicious and really short post!!
I just made these this morning and they were such a hit that I just had to post, even though time is short for this busy mama!
I will say that they are a portable bowl of oatmeal or “porridge” as we say! Great on the go, great in the lunch box of your wee ones and packed with protein, making them great pre or post workout fuel!! They are also vegan and gluten free!!🙌🏼🙌🏼

1 cup gluten free buck wheat flour
1 cup gluten free oats
2 tbsp chia seeds
1 tsp baking powder
1/4 tsp vanilla bean powder (or 1 tsp vanilla)
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup ground flax seed mixed with 1/2 cup water
1/4 cup coconut oil (liquid form)
1/2 cup apple sauce
1/3 cup honey
2 tbsp maple syrup
1/2-3/4 cup blueberries
-Pre-heat oven to 350 degrees.
-Line a 9×9 pan with parchment paper.
-Mix ground flax seed with water and set aside.
-Combine all dry ingredients.
-Combine all wet ingredients.
-Mix the wet ingredients into the dry ingredients and blend well.
-Add blueberries until just mixed through.
-Transfer to prepared pan.
-Bake for 25-30 minutes.
-Let cool for a few minutes before you dive in! 😊
